Heart Coconut Rice with Beans

Coconut Rice with Beans

If you're looking for a new dinner recipe, make this easy and quick Jamaican rice. Flavoured with coconut milk and vegetable stock, and topped with kidney beans, it has a delicate flavour that you're sure to love.



Preparation time: 8-9 minutes
Cooking time: 15 minutes



Ingredients
• 2 tbsp extra light olive oil
• 1 onion, finely chopped
• 4 cloves of garlic, finely chopped
• 1 tsp ginger, finely chopped
• 2 tsp thyme
• 2 cups long-grain rice, soaked in water (sela rice)
• 2 cups chicken or vegetable stock
• 2 cups coconut milk
• 1 cup kidney beans (rajma)
• Salt and black pepper to taste



Method
• Heat the oil in a pan and add the garlic, onion, ginger and thyme and cook for 1-2 minutes.
• Drain the rice of water and add the pre-soaked rice to the pan. Mix well.
• Add the chicken or vegetable stock, coconut milk, salt and black pepper powder and cook for 1 minute.
• Add the kidney beans, mix well, then cover the pan and cook for 2-3 minutes.
• Serve hot.
